If lemon and sugar is no longer exciting enough for your pancake, try these more unusual ones!
1. The Breakfast Pancake
For a strong start to Pancake Day, why not have one as soon as you get up? Crispy bacon and maple syrup is the way to go for that, and it doesn't take too long. Make sure your bacon is extra crispy though! You may think this filling sounds a little strange, but the combination of sweet and salty is just divine.
2. Tropical Punch
Take yourself off to warmer climates with this zesty pancake. Make a citrus sauce, with caramelised sugar, orange zest and lemon juice – drizzle over your pancake, and add slices of mango or orange slices. Finish off with Greek-style yoghurt, and you'll feel like you're on holiday!
3. Winter Warmer
This one will be great if Pancake Day turns out to be a little chilly this year! Stew up some apples in a pan with butter and sugar. Add spices such as cinnamon, nutmeg and star anise to taste – it's like mulled cider in a pancake! Make sure you taste the stewed apple before serving it, to get the right balance of sweetness and sharpness.
4. Goat's Cheese and Red Onion
Don't rule out savoury pancakes if you have a sweet tooth! Crumble your goat's cheese onto the pancake (soft cheese works best) and caramelise some red onions. For an extra dimension, add some rocket to the mix. This recipe works particularly well for pancakes made with whole-wheat flour.
5. Lemon Cheesecake
For a light snack, this pancake is perfect. Swirl lemon curd and Mascarpone cheese onto your pancake, for a citrusy and creamy filling. Blueberries are also a lovely addition, to add a bit of extra juiciness!
