Summer cocktail recipes you’ll love

It’s the weekend!

Summer is here and what better way to celebrate than with a deliciously summery cocktail!

Super quick and so refreshing, these prosecco based slushies are sure to quench your thirst!

Strawberry Prosecco Slushie:

Ingredients  (Makes 5):

  • 700ml Prosecco
  • 5 tablespoons fresh orange juice
  • 5 teaspoons honey
  • 5 cups frozen whole strawberries
  • Garnish (optional): fresh strawberries and/or orange slices


  1. Place Prosecco, orange juice, honey, and frozen strawberries in blender. Blend until smooth.
  2. Garnish with orange slices and/or strawberries as desired.
  3. Enjoy!

Mango Mojito

The sweetness of the mango perfectly compliments that tangy mint making this one of our absolute favourite summer cocktails.

Ingredients (serves 4):

  • 200 ml white rum
  • 6-8 tsp sugar (depending on preferred sweetness)
  • Handful of mint leaves
  • 60 ml Lime juice
  • Mango chunks (optional)
  • 60 ml mango juice (Available at Lidl)
  • Mango Chunks (optional)
  • Soda water


  1. Muddle together mint and sugar in cocktail shaker or glass
  2. Add lime juice to shaker
  3. Add mango juice and chunks if using and mix together
  4. Add rum
  5. Top up with soda water as required

Summer Sangria

A twist on an old classic, this recipe uses pineapple and watermelon but you can substitute in your favourite fruits for a refreshing summer drink.


  • Bottle of sweet white wine
  • 1/2 cup brandy
  • 1 cup Watermelon cubes
  • 1 cup Pineapple cubes
  • 1 sliced lime
  • Lemonade or Lime Soda
  • Ice


  1. Mix together wine and brandy
  2. Add fruit
  3. Top with chosen soda
  4. Serve over ice

Blackberry Bramble

Perfect for when the first blackberries of the summer emerge. Tangy and refreshing!

Ingredients (serves 1):

  • 40ml gin
  • 10ml sugar syrup
  • 15ml crème de mur (blackberry liqueur)
  • 15ml lemon or lime juice
  • Blackberries to garnish (optional)


  1. Simply mix together all the liquid ingredients
  2. Garnish with blackberries
  3. Add ice if desired

Blue Hawaii

This bright blue cocktail looks just as good as it tastes.

Ingredients (serves 4):

  • 85ml Vodka
  • 85ml White Rum
  • 56 ml blue curacao
  • Splash of Pineapple Juice
  • Squeeze of lemon juice
  • Dash of sugar syrup (Available at most supermarkets)


  1. Just add all the ingredients into a shaker and shake well
  2. Strain over a glass with ice
